Cook it Easy

Ice Cream Sandwich


Use store bought chocolate chip cookies (the big flat ones), sandwich softened ice cream between them, then pop them back in the freezer until you are ready to eat dessert!

Cook it Easy: Sindhi Special

Tidali Dal

Ingredients:
  • 1/2 cup urad dal
  • 1/2 cup chana dal
  • 1/2 cup moong masoor dal
  • 6-8 tomatoes chopped
  • 1 inch ginger minced
  • 6-8 cloves garlic minced
  • 4 green chilli chopped
  • 4-5 curry leaves
  • 1/2 tsp asafoetida (hing)
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/4 tsp dry mango powder
  • 2 tsp vegetable oil
  • Salt to taste
Method:
  1. Mix all three dals in a bowl.
  1. Wash and clean them thoroughly 2-3 times in normal water.
  1. Soak the mixed dal in 1 glass of water and keep aside.
  1. In the meantime heat a pressure cooker and add 1 tsp of oil.
  1. In the heating oil add chopped tomatoes, salt, asafoetida, red chilli powder and turmeric powder.
  1. Cook for 3-4 minutes on low flame.
  1. Mix dal along with its water and add 1 more cup of water.
  1. Cover the pressure cooker and leave to cook for 12- 13 minutes. (about 6-8 whistles)
  1. Open the pressure cooker and add water to make the thin dal as it should not be too thick.
  1. Keep on boil on low flame.
  1. Heat a sauce pan and add 1tsp oil.
  1. As oil heats add curry leaves, cumin seeds and mustard seeds.
  1. Allow them to crackle and then add green chillies and minced ginger-garlic.
  1. Mix well and add this mixture into the boiling dal.
  1. Add dry mango powder and lots of chopped fresh coriander leaves.
  1. Serve with jeera rice or chapati along with fried potatoes.

 Sindhi Bhuga Chawal 

Ingredients 
  • 2 cups rice
  • 4 big onions chopped
  • 1/2 tsp red chilli powder
  • 1/2 tsp cumin powder
  • 2 tbsp vegetable oil
  • Salt to taste
Garam Masala
  • 1 bay leaf
  • 2 cloves
  • 2-3 peppercorns
  • 1 big black elaichi
  • 2 green elaichi
  • 1/2 inch cinnamon stick

Method
  • Wash and soak the rice for about 30 minutes before proceeding.
  • Heat up the handi on medium high flame, add oil.
  • Add whole garam masala and saute for few seconds.
  • Add chopped onion, fry until onion turn dark brown in color.
  • Add salt, red chilli powder, cumin powder and little bit of water.
  • Cook for 2-3 minutes and then mix the rice.
  • Add water which should be double of the rice quantity.
  • Cook on high heat for 5-6 minutes and then lower the flame and cover the pan.
  • Leave on low flame until rice get cooked properly.
  • Serve hot

5 Handy Household tips

  
Tip 1
Pull bananas apart before displaying them in your fruit bowl. If you leave them connected at the stem, they'll ripen faster and go brown quicker. 

 Tip 2
To reheat a pizza so that the base is out-of-the-oven crisp, heat your leftover slices in a fry pan on low-medium heat on the stove until warm and wave goodbye to the days of soggy microwave pizza.

   Tip 3
If you seal an envelope and realise you've forgotten to include something inside, just place it in the freezer for an hour or two, the envelope will unseal without a trace!
Tip 4

    Revive Crystallized Honey: Place the container in a bowl of hot water until the honey is smooth and runny, 5 to 10 minutes. (Alternatively, remove the lid, then microwave the jar in 30-second intervals.) To prevent crystals from forming again, store the honey in a cool, dry place (not the refrigerator) and avoid introducing moisture

   Tip 5 

    Storing Leftover Tomato Paste: Freeze it in tablespoon-size portions in an ice-cube tray. Once they’re solid, transfer the cubes to a plastic freezer bag. Later add them directly to recipes—no need to thaw
